All these olives are still marinating. For the jars... Only recommendation is to consume everything (all the olives and all the oil) within 12 - 18 months and do not refrigerate them. They don't need it - even when opened. The oil is the preservative and also adds to the flavour. For loose... they are freshly made to order and have a 6 week shelf life.

SUNSHINE
A Greek recipe of mixed olives marinated in Rosemary infused Extra Virgin Olive Oil with Garlic and Sun-Dried Tomatoes. Fantastic with white wine or a G & T. These are one of our best selling olives.
CLASSIC
A marinated spicy Sicilian mix of olives in Chilli infused Extra Virgin Olive with, Garlic, Bay and cracked Black Pepper. These spice up the longer you leave them but a cold beer or soft drink quenches the fire.
MOORISH
Kalamata olives prepared to a Moroccan recipe with Cumin, Coriander and Cardamom. Aromatic and delicate but rich and deep in flavour. Try these with Rioja or a fine Oaky Red.
VERDE
Green olives marinated in Lemon infused Extra Virgin Olive Oil flavoured with Coriander and Garlic. Zesty and fresh, the Spanish used to eat them at breakfast!
PISTOU
A French recipe of Green Olives in Extra Virgin Olive Oil with fresh Basil and Garlic. These are a really popular, simple but full of flavour olive and we love them here. The perfect mix to go with a glass of white.
SMOKED KALAMATA
Kalamata Olives gently smoked over oak chippings then steeped in Extra Virgin Olive Oil. The best bit is the oil becomes a tad smokey and can be used to do great scrambled eggs.

Possibly the definitive olive of all time. Kalamata olives, water cured then steeped in Extra Virgin Olive Oil. Straight and Simple for the true flavour... lovely.

This really is an authentic Australian recipe! Kalamata Olives cured in a sweet but tangy mix of Vinegar, Oil and Brine. These aussies are very juicy and succulent with a nudge of chilli.
